I would be interested in what answers appear here but, as far as I know, we do not really have a good notion. A reasonable place to start, I think, is to consider $\aleph_0$-categorical theories with finite models. And take a look at the book "Finite structures with few types" by Hrushovski and Cherlin. However, the book requires a strong background in logic.
