Nov 25, 2019 at 16:00 comment added Will Brian If you take your Polish space $X$ to be $\mathbb R$ or the two-point space $\{0,1\}$, then the cardinal you're asking about is equal to the splitting number $\mathfrak{s}$ by Theorem 3.2 in Andreas Blass' chapter from the Handbook of Set Theory: math.lsa.umich.edu/~ablass/hbk.pdf. I'm not sure what other $X$'s might get you.
