If nobody (myself included) comes up with an interesting definition using infinite ordinals in the next few days I'll accept this answer since it explains why things become trivial as mentioned in Harry's answer, and the homotopy reason is compelling. I would however like to leave open the possibility of someone coming along and posting an interesting definition here, so I reserve the right to move the acceptance check to a new answer of that type should one arrive.
