The Gillet--Grayson construction yields a simplicial set $G.\mathcal{C}$ with a natural homotopy equivalence $|G.\mathcal{C}| \simeq \Omega K(\mathcal{C})$, but not another exact category $\mathcal{D}$ such that $K(\mathcal{D}) \simeq \Omega K(\mathcal{C})$.
