Jul 20, 2013 at 21:28 comment added Vidit Nanda @AndrásSzűcs I don't think anyone has systematically studied "PL Cerf theory": in general I don't see why homotopies $F_t: K \to \mathbb{R}$ of locally affine maps should be locally affine for almost all $t$ unless you are careful. There is some progress in corresponding questions for discrete Morse theory (i.e., Forman's rather than Bestvina's) which you can find in my MO answer to Daniel Moskovich's question here: mathoverflow.net/a/105469/18263
